Ingredients:
For the beef
1 pound beef sirloin or tenderloin, thinly sliced into strips
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons all-purpose flour
For the sauce
2 tablespoons olive oil or butter
1 medium onion, finely chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 cup beef broth
1 cup sour cream
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Salt and pepper to taste
For serving
12 ounces egg noodles or rice
Fresh parsley, chopped (optional)
Instructions
Prepare the beef:
1. Season the beef strips with salt and pepper.
2. Lightly coat the beef with flour, shaking off any excess.
Cook the beef
1. Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat.
2. Sear the beef strips in batches until browned on all sides. Remove from the skillet and set aside.
Prepare the sauce:
1. Add another tablespoon of olive oil or butter to the skillet.
2. Sauté the onions until softened, about 3 minutes.
3. Add the garlic and mushrooms, cooking until the mushrooms are browned and tender.
4. Stir in the beef broth, scraping up any browned bits from the bottom of the skillet. Simmer for 5 minutes.
5. Reduce the heat to low and stir in the sour cream, Dijon mustard, and Worcestershire sauce. Season with salt and pepper to taste.
Combine and serve:
1. Return the beef to the skillet and simmer for 5 minutes, allowing the flavors to meld.
2. Cook the egg noodles or rice according to package instructions.
3. Serve the beef stroganoff over the noodles or rice, garnished with fresh parsley if desired.
